Italian-Style Beef & Bean Soup Recipe
Serves: 6 generous servings
Ingredients
1 tablespoon olive oil
1 lb ground lean beef (or ground turkey)
1 onion, diced
2 carrots, chopped
2 ribs celery, chopped
3–4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 tablespoon tomato paste
1 (15.5 oz) can diced tomatoes
1 (15.5 oz) can white beans (cannellini or great northern), drained and rinsed
1 (15.5 oz) can kidney beans (light or dark), drained and rinsed
4 cups broth (chicken or vegetable)
1 bay leaf
1 bunch kale, chopped
Salt and pepper to taste
Instructions
Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.
Add the ground beef (or turkey) and cook until browned, breaking it into crumbly pieces. Drain excess fat if needed.
Stir in the onion, carrots, and celery. Cook for about 5 minutes, until softened.
Add the garlic, oregano, and basil. Cook for 1–2 minutes, until fragrant.
Stir in the tomato paste.
Add the diced tomatoes, beans, broth, bay leaf, and salt and pepper. Stir well.
Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes.
Add the chopped kale and cook for about 5 minutes more, until wilted.
Remove the bay leaf before serving and enjoy.
Make It Your Own
Swap proteins: Ground turkey works beautifully
Make it vegetarian: Omit the meat and use vegetable broth
Add extra veggies: Zucchini, green beans, broccoli, or spinach all work well
Finish with flavor: A sprinkle of Parmesan or red pepper flakes before serving
