And ideally, something that doesn’t take a ton of time or effort to make. Because if it’s complicated, let’s be honest, it’s probably not happening on a regular Tuesday.

Cottage cheese is one of my kitchen staples. It’s rich in protein and calcium, two nutrients I prioritize daily, especially for muscle health, steady energy, and to help reduce cravings.
And when you combine cottage cheese with lemon and blueberries and wave your magic wand (also known as a blender and an oven)...You get something that feels like a decadent dessert, but actually supports your body.

Healthy Cottage Cheese Lemon Blueberry Bars🍋
Servings: 9
Ingredients
½ cup old-fashioned rolled oats
16 ounces low-fat cottage cheese
2 eggs
¼ cup honey
1 tsp vanilla extract
Juice and zest of 1 lemon
½ cup frozen blueberries
Coconut oil for greasing
Directions
Preheat oven to 350°F and grease an 8x8 glass baking dish with coconut oil.
Pour oats in a blender and blend on high speed for 20–30 seconds until flour-like.
Add cottage cheese, eggs, honey, vanilla, lemon juice, and zest. Blend until smooth.
Pour into the prepared baking dish. Sprinkle frozen blueberries on top and gently fold in.
Bake 35–40 minutes until fully set, and the edges are just slightly browned.
Cool completely before slicing.
