When it comes to comfort food, meatloaf is a classic. But the traditional recipe loaded with breadcrumbs, processed ketchup, added sugar, and high-fat meats, doesn’t always support our long-term health goals. That’s why I love this lighter, healthier, gluten-free turkey meatloaf recipe that’s full of protein, simple to make, and much better for your body.


This recipe is a weeknight staple in my house because it only takes about 10 minutes to prep and 30 minutes to bake. While the oven is doing the work, I’ll steam a quick veggie, like green beans, and make my creamy mashed cauliflower (a.k.a. "faux grits") instead of mashed potatoes. By the time the oven timer dings, dinner is ready…hearty, healthy, and delicious!

Ingredients


For the loaf:

  • 1 pound lean ground turkey

  • ¼ cup almond flour (almond meal)

  • 2 oz tomato paste

  • 1 egg

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1 tablespoon dried basil


For the topping:

  • 4 oz tomato paste

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon dried basil

  • ¼ tsp salt


Instructions

  1. Preheat oven to 400°F. Line a loaf pan with foil for easy clean-up and spray with non-stick spray, or use a non-stick loaf pan.

  2. In a medium bowl, combine the meatloaf ingredients. Spread evenly into the prepared pan.

  3. Mix topping ingredients (in a small bowl or directly in the tomato paste can). Spread evenly on top of the loaf.

  4. Bake for 30 minutes, or until a meat thermometer reads 165°F.

  5. Remove from oven and let rest for 10 minutes before slicing.
