Refreshing Watermelon Feta Salad with Avocado-Lime Dressing

Okay, I know I usually only post one new recipe a month, but this month I was inspired! It's July, and melon season is in full swing—sweet, juicy, and oh-so-refreshing on these hot summer afternoons.
In last month’s post, I shared a bit about my recent travels (you can read it here) and how grateful I am for staying consistent with fitness so I can fully enjoy active vacations...
Just this week, I had a conversation with one of my clients who also got back from vacation. She was so excited to tell me about a hike she completed; something she said she never could have done last summer before we started working together. I love hearing stories like that because they’re such a great reminder of why we stay active: so we can fully enjoy experiences, whether that’s hiking a mountain trail or simply walking through a new town and soaking up the views while trying new foods.
Well, since returning home, I haven’t stopped thinking about one particular dish I enjoyed during the trip: a watermelon feta salad with an avocado lime dressing that totally surprised me.
It had such an unusual mix of flavors, but somehow, it just worked. I snapped a photo at the restaurant so I could remember what was in it, and after a little experimenting in my kitchen, I think I’ve come up with a pretty perfect recreation. Honestly? I might even like my version better!

Why It Works
What makes this salad so crave-worthy is the balance of flavors and textures:
The sweet, juicy watermelon pairs perfectly with the salty, creamy feta.
Peppery microgreens add a slightly bitter bite to balance the sweetness.
Pepitas (shelled pumpkin seeds) give a satisfying crunch and nutty depth.
And then there’s the dressing: smooth, creamy, and slightly sweet thanks to avocado, lime, maple syrup, and olive oil.
Not only does the dressing tie everything together beautifully, but it also delivers heart-healthy fats that you can feel good about.
Serve this as a refreshing appetizer, a light lunch side, or even a fun and unexpected dessert after a summer meal.
Watermelon Salad with Avocado-Lime Dressing
Ingredients for the Salad:
1 small “personal-size” watermelon, cubed
2 oz microgreens, cleaned and patted dry, **see note below for alternatives
4 oz feta cheese, crumbled
¼ cup pepitas (shelled pumpkin seeds)
For the Dressing:
1 small avocado
½ lime, juiced
¼ cup light extra virgin olive oil
¼ cup maple syrup
¼ tsp salt
Directions
Arrange the watermelon cubes on a serving platter.
Layer the microgreens on top.
Sprinkle with crumbled feta and pepitas.
In a blender or small food processor, blend all the dressing ingredients for 1–2 minutes until smooth and creamy.
Serve the dressing in a small bowl on the side, or drizzle over the salad using a spoon or piping bag.
Note:
** If you don’t have microgreens on hand or can’t find them at your local market, no problem! You can easily substitute with baby arugula, baby spinach, or a spring mix. These options still add a nice contrast to the sweet melon and pair well with the creamy dressing.
