5 Healthy Salad Recipes You'll Actually Look Forward to Eating

"You never bring a boring salad!"
That's what my friend Nina told me one evening when I was asked to bring a side dish for dinner.
To me, there's nothing more disappointing than an iceberg lettuce salad with a handful of carrots or tomatoes and ranch dressing. Not only is it uninspiring, but it's also a missed opportunity to enjoy all the color, flavor, and nutrition that a great salad can offer.
If I'm going to eat something, I've got to enjoy it, and it has to support my health. Otherwise, what's the point?
When I think of a nutritious salad, I think of an opportunity to combine colorful vegetables, protein, fiber, healthy fats, and fresh flavors into one satisfying meal or side dish. A great salad should leave you feeling nourished, energized, and looking forward to the next bite.
When I'm coaching my clients, whether in a private session or inside my Eat With Ease Method group coaching program, we often talk about making healthy eating easier by keeping a handful of favorite recipes on rotation.
